DAY 1

8:00am – 4:00pm

INTRODUCTION TO FERMENTATION

An overview of fermentation science and applications of fermentation technology

  • Introductions
  • Fermentation Overview and Examples
  • Designing a Fermentation – Prep, Media, Sterilization
  • HANDS ON LEARNING: Fermentation preparation demonstrations in pilot plant

EVENING

Reception & tour at local brewery

Day 2

8:00am – 5:00pm

MICROBIOLOGY & MONITORING

How do those single-celled organisms operate, and what motivates them?

  • Growth, metabolism, & feeding
  • Molecular biology and strain design
  • Aerobic vs. Anaerobic – kinetics, mass & heat transfer
  • Sterility and Phage Management
  • HANDS ON LEARNING: Laboratory monitoring of your fermentations – HPLC, GC, YSI, UV-Vis

Day 3

Industry Perspective and Scaling Up

Understanding the scientific background of fermentation is great, but what happens when you’re ready to implement it in an industrially-relevant setting? Hear from industry representatives and leaders!
