Ruchir Agrawal is a master’s student in food science in Dr. Pawan Takhar’s laboratory. He graduated with a B. Tech in Food Engineering and Technology from Institute of Chemical Technology, Mumbai, India. His current research focuses on making value added protein products and investigating their nutritional and functional properties.
Ruchir intends to gain a deeper understanding of how unit operations affect the material properties of the product. He intends to be able to control the intricacies of a process to optimize/intensify the subsequent product. He also intends to hone his investigative skills in order to explore the engineering behind products and technologies. He looks forward in gaining a well-rounded education in scaling up lab-scale projects.
